Pork, Fennel & Caramelised Apple Sausage Rolls
Flaky buttery pastry, succulent juicy sausage.....hot out the oven and the perfect picnic snack. With a big dollop of ketchup and mustard (No one else mix them together? Just me then)
Anyone go to a picnic or go to the shops to get picnic stuff and realise that all the convenient picnic snacks are never gluten free? I mean theres only so many crisps and dip a girl can eat...right? And I'm all for just drinking Prosecco on a park bench but if there are no snacks then ...well nobody needs to see that. Haha anyway I am deviating..any who these sausage rolls are the bomb and perfect to take in your picnic basket.
By all means make your own pastry but ready rolled pastry is just as good and very convenient.
Makes 16 Sausage rolls
Ingredients
400g gluten free pork sausages (I used Heck, they are delicious) Take the pork meat out of the skins and set aside in a mixing bowl.
280g gluten free puff pastry (Could make it but easy to buy it pre rolled)
1 large red onion diced
1 gala apple diced
2 tsp Fennel seeds
1 tsp Olive oil
Poppy seeds for sprinkling
Pre heat the oven to 195 degrees and line a baking tray with greaseproof paper.
Fry the onion, fennel seeds and apple in the olive oil for a couple of minutes until lovely and caramelised. Once cooked leave to cool (Do not eat this mixture as delicious as it may taste). Once cooled then add to the sausage meat, mix thoroughly adding a pinch of sea salt and pepper.
Take the pastry out of the fridge and cut the pastry in half. Roll the sausage meat back into a sausage shape and put neatly in the middle of each bit of pastry. Roll the pastry over the sausage and then with the beaten egg brush on the inner edge so it will secure the pastry around the sausage meat.
Cut into even small pieces, brush the pastry with beaten egg and then sprinkle the poppy seeds on top. Cook for 30 minutes until the pastry is golden brown.
Warning- Do wait for them to cool slightly before eating them, I know it may be hard but the deliciousness of these sausage rolls make it a hazard.
