Lentil curry with cumin roasted cauliflower & Aubergine
Its Monday…its cold outside… you want to have a nutritious meal thats comforting and warming but also doesn’t take hours out of your day to make? I have what you need..this delicious and satisfying vegan lentil curry that is perfect for meat free Monday and will leave you full and content. This curry is healthy, full of plant proteins and also adaptable, add whatever veggies you feel like and add as much spice as you want. Ingredients
(Serves 3-4)
Curry
1 Large red onion sliced
5 Garlic Cloves crushed
1 Tbsp Olive oil
1 Tbsp Turmeric
1 Tbsp Garam Masala
1 Tbsp Coriander seeds
1 Tbsp Cumin seeds
1 Medium Green chilli chopped small
1 400ml Can of reduced fat coconut milk
1 400g Can of Chopped Tomatoes
250g Split Red Lentils
300ml Water
Roasted Veg
Half an aubergine chopped chunky
Half a cauliflower head cut into florets
1 tbsp olive oil
1 tbsp ground cumin
Big pinch of sea salt flakes and black pepper
Garnish
Bunch of coriander
1 Lime
Chopped Chilli (optional)
A couple of fresh tomatoes
Method
Firstly get your spice mix ready. Toast the coriander seeds in a pan and then grind them to a powder and add them to the other spices. In a large saucepan fry the onions in a tbsp of olive oil on a medium heat for a couple of minutes until softened, then add the garlic and chilli and cook for a minute. Add the spices (You may need to add a little more oil if it seems dry in the pan but only add it by tbsp as you don’t want it to be greasy)
Cook the spices for a minute and then add the lentils, coconut milk, tomatoes and water. Bring to the boil then turn down to a simmer and leave for an hour. Stir regularly so it doesn’t catch on the bottom. Add salt and pepper.
Meanwhile toss your aubergine and cauliflower in the oil, cumin and seasonings then put on a baking tray and roast for 30-40 minutes until soft.
Once the lentil curry is thick, creamy and tastes amazing add a squeeze of lime and chopped coriander (If your into coriander that is)
Spoon into bowls and top with the roasted vegetables and an extra sprinkle of coriander and some chilli if you like it HOT! Also add some cherry tomatoes for freshness.
