Banana Protein Pancakes
These pancakes are the bomb..so comforting...so filling..yet gluten free and low in calories. Perfect after a good weight session or just as a healthy breakfast. So easy to make too! Just chuck all the ingredients into a blender then away you go.
Ingredients
50g Banana
30g Whey Protein (I use banana bulkpowders)
1 tsp Baking Powder
10g Coconut Flour
150g Egg Whites
Method
Combine all the ingredients in a blender and blend for a couple of minutes. Giving it this long will fluff up the eggs which should make the batter light. Meanwhile preheat a non stick pan (no one wants a pancake clinging on for dear life at the bottom) on a medium setting and spray with fry light or a dollop of coconut oil. Once the pan has heated pour some of your mixture into the middle of the pan. I usually get around 3-4 pancakes with this mix. When it looks like its starting to cook on the other side and you see air bubbles flip it over
Cook for a minute or so on the other side then transfer to a lightly heated oven to stay warm. Repeat the process until you have made all your pancakes.
Top your pancakes with whatever toppings you like, I added 0% Greek yoghurt and strawberries to mine, with a squeeze of my bulkpowders zero maple syrup. Other toppings you could use is Quark, chocolate chips, peanut butter, berries, golden syrup
