img_4666.jpg

There's nothing better is there?

A warm batch of toasty flapjack just out of the oven. The caramel and nutty smell in the air that makes you want to eat them for breakfast, lunch and dinner. Most flapjacks in the supermarket are full of gluten (Boooo) and its hard to get a decent gluten free one but these are the nuts! (Excuse the pun)

Ingredients

250g Unsalted butter

250g Soft light brown sugar

4 Tablespoons of golden syrup

50g walnut pieces

50g chopped pecans

350g gluten free oats

Zest of an orange

1/2 tsp ground cinnamon

Method

Line a square 26cm baking tray with greaseproof paper and pre heat the oven to 150c.

Melt the sugar, butter and syrup in a saucepan until its melted and slightly thickened. Take off the heat add the oats, cinnamon, zest and nuts and mix until thoroughly incorporated.

Put the flapjack mix in the baking tray, press down and flatten with a palette knife until the mix is even.

Cook for 35 minutes until you see the edges becoming golden. The flapjack mix will still be loose but leave it till cool and they will become perfect and chewy
